Being Vegan does not mean giving up all of your favorite things… it DOES mean enjoying food guilt free 🙂
I usually focus on a HCLF lifestyle ( High card low fat), once in a while I like to treat myself to something with some fat… but not unhealthy fat….
Gemma Stafford, A professional Chef from Ireland has a very successful Youtube Chanel called ” Bigger Bolder Baking”.
Although she doesn’t mainly focus on Vegan deserts!!! lately she has been focusing more on making them vegan friendly, but she stresses that you don’t have to be Vegan to enjoy the delicious deserts!!!
I have had an allergy to dairy all of my life! even before I was vegan I did not get to have ice-cream as a child or pizza or donuts… even if it was’nt filled with cheese… it was processed on something that had something to do with dairy.. ugh!
I had given up on everything… and I found this recipe!
not only was it vegan…. dairy free… you do not need an ice-cream machine to make it!
I followed her instructions and with in just a few hours i had made my own dairy free coconut cream ice-cream! and it is DELICIOUS!!!!! OMG!
I made it for my friends and some family members and they could not even tell the difference!
PROS: Cholesterol free, Low sodium, healthier choice
CONS: Can take a few hours! ( but make a day out of it!)
1 can (13.5 oz) full fat coconut milk
⅔ cups sugar
2 cans (13.5 oz each) full fat coconut milk
2 tsp vanilla extract (optional)
