Hi All, I was going to post this recipe later… but was craving it & decided to just share as I was making 😀 as always this is a Dairy-free Vegan recipe and No ice-cream machine is needed! Just simple & sweet pineapple coconut goodness that takes you away to a tropical beach!!! lets DO this:
Ingredients: – 2 cups of small chunks Frozen pineapple. (you can buy them in a bag or cut from a pineapple and freeze overnight)
– 1/2 cup Low fat Coconut Milk. You may ad sugar or agave if you feel it needs some!
*note: Pineapples contain bromelain, an enzyme that may help arthritis pain by easing inflammation. They are also a good source of vitamin C, which helps your immune system.
How to: – Place the coconut milk and frozen chunks of pineapple into blender, I use my Nutribullet… – pulse until the chucks of pineapple are creamier but DO NOT make it creamy.. – You might need to stop & scoop down the pineapples and swirl with a spoon to make it PERFECT!-If you feel you blended too much! then you can put in freezer for 15-20 minutes ( but don’t leave in for long because it will freeze solid) -sometimes I have some pineapple chunks in there.. which I actually love, so if you do too.. don’t worry about it.. it just makes it more delicious 🙂
